Yesterday with that yummy mac and cheese I made some green beans ~ the delicious ones we canned last year ~ and lemon pepper chicken legs. I don’t usually opt for the chicken leg but it’s easy and inexpensive. This made 3 hearty meals for way under $10.00 and I bought the expensive organic chicken!
Lemon Pepper Chicken Legs
- Chicken Legs (1-2 per person)
- lemon
- pepper
- salt
- paprika
- garlic powder
Heat oven to 375 degrees. Pat chicken dry and sprinkle with salt, pepper, paprika and garlic on all sides. Place chicken legs on baking pan with rack for crispest chicken. Zest lemon onto chicken and bake for 15 minutes. Squeeze some lemon onto chicken and flip over; bake another 15-20 minutes. Bump heat up to 425 degrees. Squeeze some more lemon juice over chicken and flip pieces back over. Return to oven for another 5-10 minutes to finish crisping skin. Chicken is done when juices run clear; or check temperature with thermometer add more time if needed.
