I often forget about orzo, but it is one of my favorite pastas. I enjoy the shape and the size.; often times I use it with rice for a tasty pilaf. Today’s recipe is for garlic parmesan shrimp. I had thought I would have this with spaghetti or angel hair but I was fresh out hence the orzo.
Garlic Parmesan Shrimp
- 12 o.z. large shrimp ~ peeled and deveined
- 6 cloves garlic ~ minced
- 2 Tbs butter
- 1/4 cup grated parmesan ~ plus extra for sprinkling on top
- 1/4 tsp crushed red pepper
- salt and pepper
- 1/2 cup uncooked orzo ~ cooked according to package
Over medium high heat melt butter; add shrimp; season with garlic, crushed red pepper, salt and pepper ~ cook about 4-6 minutes or until cooked through. Stir in parmesan and cooked and drained orzo (do not rinse). Grate extra parmesan over top just before serving if desired.
