Caesar Veggie Dip

We had hot wings again for dinner tonight and another great veggie dip.  Just a quick post for tonight; I forgot to take a picture but it was fabulous.

  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 tsp granulated garlic
  • 1/2 tsp onion powder
  • 2 tsp extra virgin olive oil
  • 1 Tbs anchovy paste
  • 2 Tbs lemon juice
  • 2 tsp Worcestershire sauce
  • 1 Tbs dried parsley
  • 1/2 cup grated parmesan
  • salt and pepper to taste.

Combine all ingredients at least 30 minutes before serving to allow flavors to combine.  Serve with your favorite vegetables.

Cheesy Buffalo Chicken Patties

I had some leftover chicken and decided to give these buffalo chicken patties a try.  I like the combination of cream cheese and cheddar with the hot sauce.  We make our own wing sauce using Franks Red Hot sauce as the base; this will be best using your favorite wing sauce what ever it may be.  Maybe they need some bread crumbs mixed in to hold them together better; but the flavor is great as it is and after they cool the cheese firms a little so they really are much easier to handle.

Cheesy Buffalo Chicken Patties

  • 1 cup leftover chicken – diced or shredded
  • 1/2 cup celery – thinly sliced
  • 2 Tbs green onion – thinly sliced
  • 1/4 cup wing sauce ~ choose your favorite wing hot sauce
  • 2 o.z. cream cheese
  • 1/2 cup shredded cheddar
  • oil
  • flour

Mix together all ingredients except the oil and flour.

Form into patties; I made 6.  In large skillet heat about 1/4 inch of oil over medium – medium high heat.  Dip patties in flour to coat and fry for about 4 – 5 minutes each side.  Remove from skillet and drain well on paper towels; allow to cook at least 3 minutes before serving.

Bleu Cheese Hot Wing Dip

Today Charles made one of my favorites for dinner ~ Hot Wings.  I’ve got to share the bleu cheese dressing he makes to go along side.  It’s nice and thick and creamy; great for dipping celery and carrots in.  Just a short post today ~ it’s been a long day ~ We’ll share more about the wings and our sauces soon!

Bleu Cheese Dip

  • 1/4 cup sour cream
  • 2 tsp mayo
  • 1/8 tsp granulated garlic
  • 1/16 tsp onion powder
  • 1/8 tsp salt
  • 1 tsp lemon juice
  • 1 dash Worcestershire sauce
  • 1/8 tsp sugar
  • 2 Tbs bleu cheese crumbles

Mix together all of the ingredients and chill for at least an hour before serving.  This will be a thick dip for vegetables and such. Makes enough dip for 2.
