Spicy Roasted Potatoes with Garlic… and Ginger

Charles decided to experiment with some roasted potatoes today.  I hadn’t thought to use ginger with potatoes but it smells and tastes delicious.  Garlic and butter are always a favorite way to go and we always enjoy spicy food so adding crushed red pepper was a no brainer…. the ginger however was a delightful addition.

Spicy Roasted Potatoes with Garlic… and Ginger

  • 2 1/2 pounds potatoes
  • 5 Tbs butter
  • 5 cloves garlic
  • 2 tsp kosher salt
  • 1 Tbs fresh grated ginger
  • 1 tsp black pepper
  • 1 tsp crushed red pepper
  • 1 tsp dried rosemary

Melt butter and stir in minced garlic, salt, ginger, black pepper, crushed red, and rosemary.  Cut potatoes into wedges.  Toss with butter mixture.  Spread onto baking sheet in a single layer and roast at 400 degrees for 25 minutes.  Turn oven to broil and cook an additional 5 minutes.

Ginger and Apricot BBQ Dipping Sauce

Sundays are always a busy day for me and usually end with some type of appetizer or snack for dinner.  Today we were in the mood for chicken.  Charles had picked up some boneless – skinless chicken thighs so we decided to cut them into strips and serve with a dipping sauce.

Ginger and Apricot dipping sauce

  • 1/4 cup brown sugar
  • 1/4 cup apricot preserves
  • 1/4 cup orange juice
  • 1 tsp freshly grated ginger
  • 1 tsp crushed red pepper
  • 1 tsp tamari or soy sauce
  • 2 cloves garlic – grated or minced
  • 1/4 cup ketchup

Combine all ingredients in saucepan; heat over medium until sugar in dissolved and sauce in warmed. Serve with fried chicken or shrimp for dipping.

Asian Zing Sauce ~ a spicy dipping sauce for shrimp and wings

I could not get enough of this sauce when Charles made it with our wings Sunday night.  In fact the leftovers I used the other day with the fried shrimp and vegetarian fried rice.  I couldn’t say if I liked the shrimp or wings better.  All I do know is that next time I do a stir fry this is going in too!  It reminded me almost of a spicy duck sauce; I love the flavor combination of this recipe and the thickness was perfect for dipping.

Asian Zing Sauce

  • 1 jalapeno ~ minced
  • 2 cloves garlic ~ grated
  • 1 tsp lemon juice
  • 1 tsp parsley
  • 1 Tbs soy sauce
  • 1/2 tsp fresh ginger ~ grated
  • 1/4 cup orange juice
  • 2/3 cup corn syrup
  • 1/3 cup sugar
  • 3 Tbs rice wine vinegar
  • 2 Tbs corn starch

Combine first 9 ingredients; everything but vinegar and corn starch.  Over medium heat bring to a simmer.  Reduce heat to low and simmer for 30 minutes to combine flavors.  Whisk together corn starch and vinegar; stir into simmering sauce until thickened.
